Long before I embraced Islam, this turkey was a cherished Thanksgiving tradition in my family. Every year, my mother would begin preparing it just after midnight, carefully seasoning it overnight before slowly roasting it to perfection the next day. The aroma alone would fill our home with warmth, anticipation, and togetherness.
As I continued my culinary journey, I discovered that beautifully roasted turkey isn’t just a tradition among Americans during the holidays. Families and cultures around the world have their own beloved versions, each celebrating the comfort of gathering around a shared table.
Prepared with my homemade herb stuffing and served with cranberries whenever they’re in season, this dish is tender, comforting, and full of unforgettable flavor.

Hungarian-Inspired Stuffed Cabbage
Some of the most treasured recipes come from the kindness of others.
Many years ago, a very dear family friend asked his ailing grandmother if she would allow him to share her homemade tomato sauce recipe with me. With her blessing, he passed it on, and I have treasured it ever since.
The inspiration for this Hungarian-style stuffed cabbage came from a very dear family friend whose father was born in Budapest and was the only surviving member of his immediate family after the Holocaust. He taught me how to make traditional Hungarian cheese and, through his family, shared with me an appreciation for the warmth, simplicity, and comfort of Hungarian home cooking.
Inspired by those memories, this stuffed cabbage became one of my favorite dishes to prepare. Tender cabbage leaves are carefully filled, gently simmered, and finished with that homemade tomato sauce, creating a meal that is both hearty, wholesome, and deeply comforting.

Becka’s Trini Twist
Some of my favorite recipes were born from necessity.
Growing up with food allergies, I often had to find creative ways to enjoy the foods I loved while avoiding unnecessary ingredients, including the artificial orange coloring and excess grease commonly found in many traditional meat patties.
Inspired by Trinidad’s beloved meat patties, I wanted to create something just as flavorful but with my own twist. Instead of a small pastry, I developed a heartier version wrapped in a light, flaky crust and filled with bold, homemade flavors.
Whether prepared with seasoned beef, chicken, shrimp, fish, or vegetables, every Trini Twist is made from scratch with quality ingredients and the same attention to flavor that inspired its creation.
